We're back into the swing of things after school holidays and daylight savings starting, it's coming to the time of year for us that things really ramp up so I need to be super organised with meal prep and having food available. The only problem is our meals are tending to get a bit monotonous so I need to add some extra flavours to make things a bit more interesting. Might be time to plant that herb garden I keep thinking of!!
SUNDAY - Macadamia, Parmesan and Rosemary crumbed Lamb Racks. This is a taste sensation that you have to try, I just throw macadamias, Parmesan and fresh Rosemary in the thermomix for a few seconds and then press over the back of the Lamb Rack then bake in the oven. Serve with some steamed vegetables.
MONDAY - Chicken and vegetable stir fry with rice noodles. Flavoured with some garlic, ginger, honey and tamari.
TUESDAY - Skinnymixers Coconut Curried Sausages, I'll put the link on our Facebook page. I've heard a lot about this recipe and can't wait to try it, this will be served with rice or cauliflower rice.
WEDNESDAY - Boneless leg of Lamb in the slow cooker, served in wraps with salad and tzatziki. Yum!
THURSDAY - Rib Eye Steak on the BBQ with vegetables and oven baked potato wedges.
FRIDAY - Marinated Chicken and Beef kebabs, Brad makes these regularly now that the weather is improving, such a delicious easy option for the BBQ, salad and some fresh bread will complete the meal.
SATURDAY - Brad and I are having a rare kid free night so we will send some Crumbed Lamb Cutlets with them to my parents, Mum loves our Cutlets and they're extra good at the moment with Spring Lamb!
