What a weekend it has been! It was so exciting to be at the Palladium at Crown for the AMIC Victorian Awards Dinner on Saturday night but to come away with two Sausage King Awards was incredible. Hence we are having a very simple and nourishing Chicken and Vegetable Soup for tea tonight.
We love Lamb Loin Chops baked in the oven, I pop them in the oven when I get home from work with some sliced up potatoes and then all that needs to be done is to steam some vegetables and the meal is ready. Serve this with some Beerenberg Mint Jelly or some Stock Merchant Traditional Gravy.
Parma night! We make our Chicken Schnitzels daily in store from chicken breasts, butterflied open and crumbed. I'm thinking some potatoes, pumpkin and brussel sprouts baked in the oven with cream and french onion soup and some steamed greens will finish it off nicely.
Must be my sore head talking but all of these meals are super simple to prepare! Stirfried vegetables, green prawns and chicken with a dollop of red curry paste and some coconut milk served with steamed rice or cauliflower rice. Not too hot but still tasty, suitable for all family members although most of the prawns miss the kids bowls for some reason!
Steak on the BBQ, hopefully the weather is improving and we can sit outside and enjoy with a salad or two, maybe coleslaw or spinach salad.
Home made Pizza night, pizzas are so adaptable to each family members tastes. The base in this picture is a Fathead Pizza Base, check it out on google, very low carb and really delicious.
I've got heaps of pumpkin to use up so i'll be baking the pumpkin in the oven as the picture suggests, at this stage I think it will be served with some of our Award Winning Hamburgers fresh off the BBQ.
