I have started off my week of meal planning with a big cook up of bolognaise to put in the freezer, although it's not actually on my plan for the week it will go a long way and will give us at least three meals worth. I find my thermomix very helpful when it comes to preparing the sauce if not actually for cooking it, I use it to finely cut up bacon and onion and while that fries up with the meat, I blend up a selection of whatever veggies need to be used from the fridge. An extra tub of tomato paste does wonders hiding the extra spinach I sneak in.
SUNDAY - Boneless Lamb Shoulder, find these in store, Brad makes them with a great marinade including lemon & oregano before cryovacing. This will cook in the slow cooker for most of the day with some extra bits & pieces, turmeric, dulse flakes, celtic sea salt, apple cider vinegar & a tin of tomatoes. Serve with Roast potatoes and steamed asparagus.
MONDAY - Garlic Prawns (we have frozen green prawns in store), served in creamy garlic sauce with zoodles, broccoli & cauliflower. Those of us that eat gluten will be able to soak up the juice with some nice fresh bread.
TUESDAY - Steak on the BBQ with Fried Rice. Not just any steak, it will be from some of our excellent quality grass fed beef.
WEDNESDAY - Silverside in the slow cooker, served with mashed sweet potato and pumpkin with steamed vegetables.
THURSDAY - Popcorn Chicken, chicken thighs diced and rolled in arrowroot and french onion soup mix, then baked in the oven, you have to try this!!! Served with Salad and some cous cous for the kids.
FRIDAY - I have to be organised for Friday night because this is my laziest night, and takeaway always seems like a great option. Lamb Chops baked in the oven with some diced potatoes and coleslaw.
SATURDAY - Sausages on the BBQ, the flavour will depend on which ones the boys have decided to make this week, they've been coming up with some great new flavours. This will be served with the usual salad and for me, i love serving sausages in cos lettuce leaves in place of bread.
