I am really looking forward to this week, this collection of meals look so enticing. With a bit of luck the sun will come out and we will all be able to get some much needed vitamin D which is so important for our immune systems and optimal health.
You will notice the butter on meals and the creamy sauces, I am a big believer in the school of thought that agrees we need fat for health, fat is so important for brain function and mood among many other benefits. Think as close to nature as possible, forget "lite', go for full fat versions... dairy - butter/cream/cheese, avocado, coconut oil, nuts, eggs, olive oil just to cover the basics. I have found since cutting back on refined foods (especially those containing sugar and grains) and increasing fat in my diet, I feel fuller for longer, my moods remain steadier and I don't need to snack.
After a busy weekend, I'm not too fussed about spending much time in the kitchen Sunday night so for us it will be some crunchy bacon and tomatoes on the BBQ, poached eggs from Will's chickens at Inverloch Free Range Eggs and some fermented vegetables from Peace, Love & Vegetables plus plenty of good fats to fill us up.
Butter Chicken from Zest Byron Bay, so simple and tasty with a bit of a kick to it, served with rice or steamed veggies to keep the carbs down. We love that Zest Byron Bay don't use any numbers in their products, it's all natural ingredients.
Our usual Tuesday night meal, Steak on the BBQ, the cut depends on whatever Brad surprises me with on the night, the girls love our Beef Schnitzel so that's what they'll be having. Served with some veggies cooked on the BBQ and some cous cous for the girls.
By now, if you've been reading my meal plans it will come as no surprise to you that we are having bolognaise on Wednesday, we get home late and it is easy to batch cook and just get out of the freezer before work, served with pasta or zoodles and full of hidden veg.
This meal is a favourite, it wasn't that long ago that we had it but why not! Rack of Spring Lamb with a crumb of macadamias, fresh rosemary and parmesan. Served with some creamy mustard and turmeric vegetables.
Simple sausages on the BBQ. Served in bread or with a favourite salad of ours, Skinnymixers Red Pesto Chicken Salad, i'll post the link on facebook, we leave out the chicken and it becomes a tasty potato salad. For those going low carb, other steamed vegetables can be used in place of potatoes. Definitely a favourite over the warmer months!
Saturday night we are having family over so we will be having a boned and rolled leg of lamb, this cooks away in the slow cooker all day then i get it out to rest and turn the juices into gravy with some bone broth, apple cider vinegar, turmeric, dulse flakes, salt & pepper, thickened with arrowroot flour if needed. Served with roast potatoes and steamed vegetables.
